Ingredients

  • 4 large eggs
  • 1 tbsp butter or ghee
  • 1/2 cup onion, finely chopped
  • 1/2 cup tomato, finely chopped
  • 1 green chili, finely chopped
  • 1/4 tsp turmeric powder
  • 1/2 tsp red chili powder
  • 1/4 tsp garam masala
  • 2 tbsp fresh cilantro, chopped
  • 4 slices bread, toasted and buttered
  • salt, to taste

Equipment

  • 1 Non-stick skillet

Method

  1. Crack the eggs into a bowl, season with a pinch of salt, and whisk lightly. Set aside.
  2. Melt the butter in a non-stick skillet over medium heat. Add the onion and green chili, and saute for 2-3 minutes until softened.
  3. Add the tomato, turmeric, red chili powder and salt. Cook for 3-4 minutes, stirring, until the tomato breaks down.
  4. Pour in the whisked eggs and immediately start stirring and folding, scrambling the eggs into the masala until just set but still soft, about 2-3 minutes.
  5. Stir in the garam masala and cilantro, then remove from heat.
  6. Pile the egg bhurji onto the buttered toast and serve immediately.

Notes

For extra heat, leave the seeds in the green chili. Bhurji also keeps well wrapped in a paratha instead of toast.
