Fudgy Chocolate Banana Muffins
Deeply chocolatey muffins built on very ripe bananas — moist, fudgy in the middle, and ready before the oven’s even fully warm.
Ingredients
Equipment
Method
- Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, whisk together the mashed bananas, brown sugar, egg, oil and vanilla.
- In a separate bowl, whisk the flour, cocoa powder, baking soda and salt.
- Fold the dry ingredients into the wet ingredients until just combined — do not overmix.
- Fold in half the chocolate chips, divide the batter among the muffin cups, and scatter the remaining chips on top.
- Bake for 18-20 minutes, until a toothpick inserted in the centre comes out with a few moist crumbs. Cool in the tin for 5 minutes before turning out.
Notes
The riper (and spottier) the bananas, the sweeter and moister these turn out.
