Spicy Peanut Noodles

Real 20-minute peanut noodles — glossy peanut-soy sauce tossed with noodles and crunchy vegetables.

Tips for the best Spicy Peanut Noodles

  • Whisk the sauce with warm water so the peanut butter loosens and coats the noodles evenly.
  • Toss the noodles with the sauce while they are still warm.
  • Add sriracha a little at a time; it is easy to add more but hard to take away.

Ingredient swaps

  • For gluten-free, use rice noodles and tamari instead of soy sauce.
  • No peanut butter? Almond butter or sunflower seed butter work.
  • Use any crunchy vegetables: cucumber, cabbage or snap peas.

Use tamari instead of soy sauce and rice noodles to make this gluten-free. Great cold out of the fridge the next day.

What to serve with it

Storing and reheating

Keep in the fridge for up to 3 days. They are great cold straight from the fridge; loosen with a spoonful of warm water if the sauce thickens.
