Total Time 12 minutes
Servings: 1 serving
Course: Breakfast
Cuisine: American

Ingredients

  • 1/2 cup rolled oats (certified gluten-free if needed)
  • 1 cup almond milk (or any plant milk)
  • 1/4 tsp ground turmeric
  • 1/4 tsp ground cinnamon
  • 1 ripe banana, half sliced for topping
  • 1 tbsp maple syrup
  • 1 tbsp chopped walnuts, for topping
  • pinch salt

Equipment

  • 1 Small saucepan

Method

  1. Combine the oats, almond milk, turmeric, cinnamon, half the banana (mashed) and a pinch of salt in a small saucepan.
  2. Bring to a gentle simmer over medium heat, then reduce heat to low and cook, stirring often, for 5-7 minutes until thickened and creamy.
  3. Remove from heat and stir in the maple syrup.
  4. Spoon into a bowl and top with the remaining sliced banana and chopped walnuts.

Notes

Swap the walnuts for pumpkin seeds for a nut-free version. A pinch of black pepper helps the turmeric’s curcumin absorb better.
