Ingredients

  • 3 very ripe bananas, mashed
  • 1/3 cup melted butter
  • 2/3 cup granulated sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 1 cup all-purpose flour
  • 1/3 cup unsweetened cocoa powder
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup chocolate chips

Equipment

  • 1 9×5-inch loaf pan

Method

  1. Preheat the oven to 350F (175C) and grease a 9×5-inch loaf pan.
  2. In a large bowl, mix the mashed bananas with the melted butter.
  3. Stir in the sugar, egg and vanilla until combined.
  4. Sprinkle the flour, cocoa powder, baking soda and salt over the mixture and stir until just combined.
  5. Fold in the chocolate chips, then pour the batter into the prepared pan.
  6. Bake for 50-55 minutes, until a toothpick inserted in the center comes out with a few moist crumbs.
  7. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

Tent the loaf loosely with foil after 35 minutes if the top is browning too fast. Keeps at room temperature, wrapped, for up to 4 days.
