These date and nut ladoo need no stove and no added sugar: soft dates and toasted nuts are blitzed together and rolled. They take about 10 minutes, keep for two weeks in the fridge, and are the easiest sweet to make on a busy evening before Diwali.

Method
- Pulse the nuts in a food processor until coarsely chopped. Tip them into a bowl.
- Blend the dates until they form a sticky paste. If your dates are dry, soak them in warm water for 10 minutes and drain well first.
- Return the nuts to the processor with the cardamom and pulse a few times, just until everything is mixed.
- Take a tablespoon of the mixture and roll it into a ball. You should get about 12.
- Roll the ladoo in desiccated coconut if you like.
