No-Cook Date and Nut Ladoo

Happy Diwali

These date and nut ladoo need no stove and no added sugar: soft dates and toasted nuts are blitzed together and rolled. They take about 10 minutes, keep for two weeks in the fridge, and are the easiest sweet to make on a busy evening before Diwali.

No-cook date and nut ladoo

No-Cook Date and Nut Ladoo

Ten-minute ladoo made from dates and mixed nuts with cardamom, with no cooking and no added sugar.
Prep Time 10 minutes
Total Time 10 minutes
Servings: 12 ladoo
Course: Dessert
Cuisine: Indian

Ingredients

  • 1 cup mixed nuts about 130 g; almonds, cashews and pistachios
  • 1 cup soft pitted dates about 150 g; medjool or other soft dates
  • 0.25 tsp cardamom powder
  • 2 tbsp desiccated coconut for rolling, optional

Equipment

  • 1 Food processor

Method

  1. Pulse the nuts in a food processor until coarsely chopped. Tip them into a bowl.
  2. Blend the dates until they form a sticky paste. If your dates are dry, soak them in warm water for 10 minutes and drain well first.
  3. Return the nuts to the processor with the cardamom and pulse a few times, just until everything is mixed.
  4. Take a tablespoon of the mixture and roll it into a ball. You should get about 12.
  5. Roll the ladoo in desiccated coconut if you like.

Notes

Make ahead: up to 10 days before.
Storage: airtight in the fridge for up to 2 weeks, or 5 days at cool room temperature.
More flavour: toast the nuts in a dry pan for 3 minutes and cool them before blitzing.
Allergies: this recipe is nut-heavy. For a nut-free version, use roasted sunflower and pumpkin seeds.
