Homemade chicken noodle soup is the bowl everyone wants on a cold day or when they are feeling under the weather: tender shredded chicken, soft egg noodles, carrots and celery in a golden, herby broth. This version uses boxed broth and boneless chicken, so it is on the table in under an hour, and a squeeze of lemon at the end makes it taste bright and fresh.

Method
- Heat the oil and butter in a large pot over medium heat. Add the onion, carrots and celery and cook for 8 minutes until softened. Add the garlic, thyme and bay leaf and cook for 1 minute.
- Pour in the broth and add the chicken, salt and pepper. Bring to a boil, then lower the heat and simmer, partly covered, for 15 to 20 minutes until the chicken is cooked through.
- Lift out the chicken onto a board and shred it with two forks.
- Bring the soup back to a boil, add the noodles and cook for 6 to 8 minutes, or according to the package, until tender.
- Return the shredded chicken to the pot, remove the bay leaf, and stir in the parsley, dill and lemon juice. Taste and adjust the salt.
