Tandoori chicken gets its flavour from a two-step marinade: first lemon, salt and chilli, then thick spiced yogurt that tenderises the meat and chars beautifully in a hot oven. You do not need a clay tandoor. Roasting on a rack at high heat, then a couple of minutes under the broiler, gives you the deep red, smoky, slightly charred finish. Most of the work is simply waiting while it marinates.

Method
- Make 2 or 3 deep cuts in each piece of chicken, down to the bone. Rub with the lemon juice, salt and chilli powder and set aside for 15 minutes.
- Mix all the second marinade ingredients in a large bowl. Add the chicken and rub the marinade into the cuts. Cover and refrigerate for at least 2 hours, ideally 4 hours or overnight.
- Heat the oven to 425°F (220°C). Set a wire rack over a foil-lined sheet pan and brush it with oil. Arrange the chicken on the rack with space between the pieces.
- Roast for 30 to 35 minutes, until the thickest part reads 165°F (74°C) on a thermometer and the edges are charred in places.
- For extra char, switch to the broiler (grill) on high for 2 to 3 minutes, watching closely. Brush with melted butter and serve with lemon wedges and onion rings.
