Total Time 15 minutes
Servings: 2 cups
Course: Beverage
Cuisine: Indian

Ingredients

  • 1.5 cups water
  • 1 cup whole milk
  • 2 tsp loose black tea (or 2 tea bags)
  • 1 cinnamon stick
  • 4 green cardamom pods, crushed
  • 3 whole cloves
  • 1 inch piece fresh ginger, sliced
  • 2 black peppercorns
  • 2 tbsp sugar, to taste

Equipment

  • 1 Saucepan
  • 1 Fine strainer

Method

  1. Bring the water, cinnamon, cardamom, cloves, ginger and peppercorns to a boil in a saucepan, then simmer for 5 minutes to infuse.
  2. Add the tea leaves and steep for 3 minutes.
  3. Pour in the milk and sugar, and simmer gently for another 2 minutes without letting it boil over.
  4. Strain into cups and serve hot.

Notes

Crush the whole spices lightly before adding — it releases far more flavour than adding them whole.
