Dal tadka is the everyday comfort food of Indian homes: soft, golden lentils finished with a sizzling tempering (tadka) of ghee, cumin, garlic and dried chilli poured over just before serving. It costs very little, uses pantry ingredients and is ready in about 45 minutes, or faster with a pressure cooker. Red lentils from any supermarket work if you cannot find toor dal.

Method
- Rinse the dal in several changes of water. Pressure cooker: cook with the water, turmeric and salt for 3 to 4 whistles (about 10 minutes at high pressure). Stovetop: simmer, partly covered, for 35 to 40 minutes for toor dal or 20 minutes for red lentils, until completely soft.
- Whisk the dal until smooth and creamy, adding hot water to get a pourable, soupy consistency. Keep it warm.
- For the tadka, heat the ghee in a small pan over medium heat. Add the cumin and mustard seeds and let them sizzle and pop, then add the dried chillies and asafoetida.
- Add the garlic and cook for 30 to 60 seconds until light golden. Add the onion and cook for 4 to 5 minutes until soft, then add the tomato and chilli powder and cook for 3 minutes.
- Pour the dal into the pan (or the tadka over the dal) and simmer together for 2 minutes. Stir in the garam masala, cilantro and lemon juice.
