Aloo gobi is the dry potato and cauliflower dish you find in Indian homes and restaurants alike: tender, golden vegetables coated in turmeric, cumin and ginger, with crispy edges where they touch the pan. It is vegan, gluten-free and uses vegetables from any supermarket. Cook it on the stove, or roast it on a sheet pan if you prefer hands-off cooking.
