Ingredients

  • 1 lb smoked sausage, sliced into 1-inch rounds
  • 1 red bell pepper, cut into chunks
  • 1 yellow bell pepper, cut into chunks
  • 1 zucchini, sliced into half-moons
  • 1 red onion, cut into wedges
  • 3 tbsp olive oil
  • 1 tsp Italian seasoning
  • 0.5 tsp garlic powder
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 2 tbsp parsley, chopped, for garnish

Equipment

  • 1 Sheet pan

Method

  1. Preheat the oven to 425°F (220°C) and line a sheet pan with parchment paper.
  2. Add the sausage, bell peppers, zucchini and red onion to the pan.
  3. Drizzle with olive oil and sprinkle with Italian seasoning, garlic powder, salt and pepper. Toss directly on the pan until everything is evenly coated.
  4. Spread into a single layer and roast for 22-25 minutes, stirring once halfway through, until the vegetables are tender and lightly charred at the edges.
  5. Garnish with parsley and serve straight from the pan.

Notes

Cut the vegetables to a similar size so everything finishes roasting at the same time.
