Cuisine: Italian-American

Ingredients

  • 12 oz rotini or penne pasta
  • 2 boneless chicken breasts
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 4 cups romaine lettuce, chopped
  • 0.5 cup parmesan, grated, plus extra to serve
  • 0.75 cup Caesar dressing
  • 1 cup croutons

Equipment

  • 1 Large pot
  • 1 Skillet
  • 1 Mixing Bowl

Method

  1. Cook the pasta in salted boiling water until al dente. Drain and rinse under cold water to stop the cooking.
  2. Season the chicken with olive oil, garlic powder, salt and pepper. Sear in a hot skillet for 6-7 minutes per side until cooked through, then rest for 5 minutes and slice.
  3. In a large bowl, toss the cooled pasta with the romaine, parmesan and Caesar dressing.
  4. Top with the sliced chicken and croutons, and serve right away.

Notes

Keep the croutons separate until serving if you’re making this ahead, so they stay crisp.
