Spiced scrambled eggs piled onto buttered toast — a real 20-minute Indian breakfast, not a guess.

Method
- Crack the eggs into a bowl, season with a pinch of salt, and whisk lightly. Set aside.
- Melt the butter in a non-stick skillet over medium heat. Add the onion and green chili, and saute for 2-3 minutes until softened.
- Add the tomato, turmeric, red chili powder and salt. Cook for 3-4 minutes, stirring, until the tomato breaks down.
- Pour in the whisked eggs and immediately start stirring and folding, scrambling the eggs into the masala until just set but still soft, about 2-3 minutes.
- Stir in the garam masala and cilantro, then remove from heat.
- Pile the egg bhurji onto the buttered toast and serve immediately.
Notes
For extra heat, leave the seeds in the green chili. Bhurji also keeps well wrapped in a paratha instead of toast.
